At just 17, Alexandre began his journey in the hallowed kitchens of Maison Lameloise in France, working under the legendary Chef Eric Pras. That foundation—built on precision, respect for craft, and an unwavering pursuit of excellence—shaped everything that followed.

In 2018, he crossed continents to open Maison Lameloise Shanghai, serving as sous-chef and helping establish the outpost as a beacon of French fine dining in China. Six years later, in July 2024, he stepped into the role of Executive Chef, carrying forward a legacy while forging his own path.

Alexandre believes success isn’t about brilliance alone—it’s about consistency, humility, and the daily will to explore. For him, each service is a new challenge. Each plate, a chance to honour tradition while pushing forward.

My weekly routine is to order a classic sandwich—salami, butter, gherkin—on their wonderful seeded bread from La Parisienne
