Born in Lyon to a Vietnamese immigrant family, Chef Johnny Pham began his career at age 14 at the Michelin‑starred L’Auberge de Fond Rose. He trained under chefs including Yannick Alléno, Arnaud Donckele, and Christian Lesquer, with formative mentorship from Franck Pelux (TRB Beijing), who guided his exploration of Asian flavors.

In 2015, Johnny moved to China. He served as Executive Chef at Michelin‑starred TRB in Beijing and as Chef de Cuisine at three‑Michelin‑starred Taian Table in Shanghai.

In 2022, he opened VIVANT, where he blends French technique with Asian influences. The restaurant offers an evolving eight‑course tasting menu in a warm, unpretentious setting—a space where guests can relax and be truly cared for.

Fu He Hui’s mapo tofu is truly something to order—it will change your mind about vegetarian food. Their version, to me, is even better than the meat one.
