Born into a restaurateur family in Rome, Chef Lorenzo Merolle trained under Michelin‑starred chef Stefano Galbiati. He honed his craft at Zafferano in London and held leadership roles at The Ned and Soho House, before working extensively in Shanghai’s culinary scene.

He now leads the culinary program at Regent Shanghai on The Bund, overseeing Harmonia, Condé, and private dining. His cooking blends Italian heritage with modern technique, focusing on seasonal ingredients and artisanal craftsmanship.

I like the atmosphere at Totino Panino. Their sandwiches brings me back to Italy
I'd suggest Senator Saloon for the atmosphere, and their basil drink is really top-notch
My street food favourite: the burger at Revolution. It's incredible
For dinner, go to 1929 by Guillaume Galliot. The service and food are impeccable. I especially love the beef tartare with oyster
My breakfast choice is VERIE Bakehouse. The croissant and cappuccino are perfectly done
