Chef Takeo Oyama’s career spans four decades across Japan, Australia, the US, Hong Kong, and Shanghai. From 2008 to 2018, he became one of Shanghai’s most respected sushi masters, earning consistent accolades: Michelin Guide Shanghai recommendations (2017–2019), That’s Shanghai Best Japanese (2011, 2013, 2014) and Omakase Restaurant of the Year (2017), and multiple City Weekend Best Japanese wins. In 2018, his restaurant received Two Stars from Black Pearl and C‑trip Gourmet List. In 2013, The Daily Meal (USA) ranked it No. 52 among Asia’s 101 Best Restaurants.

Chef Oyama returned to Tokyo in 2021, continuing to work as a sushi chef with decades of precision and omakase expertise.
