Ugo Rinaldo
Born in Paris and raised on the French Riviera, Chef Ugo Rinaldo began his career at one‑Michelin‑star La Barbacane, where he helped Chef Frank Putelat win a silver medal at the Bocuse d’Or in 2003. He went on to work at Alain Ducasse’s three‑star Le Louis XV in Monaco, then at one‑star PUR’ in Paris, before joining Yannick Alléno for the opening of One&Only The Palm in Dubai and later leading Alléno’s Beijing restaurant STAY.
After a stint as Executive Chef at MGM Cotai in Macau, Ugo returned to Shanghai in 2021 as Executive Chef at The PuLi Hotel and Spa, overseeing the Michelin‑starred PHÉNIX. He founded the consulting firm Maison Passion and now serves as Executive Chef and Chef Partner of NOUS, a French fine‑dining restaurant opening in late 2025 on Shanghai’s Rock Bund.
