Francesco Bonvini
Cellar to Table
Francesco Bonvini trained in Italy and honed his craft across Elba Island, London, and Australia. In 2015, he joined three‑Michelin‑starred Da Vittorio in Italy as Chef de Partie, then moved to Shanghai as Sous Chef at Da Vittorio Shanghai, helping the restaurant earn two Michelin stars within two years.
In 2021, he launched New Wave by Da Vittorio, earning a Michelin star in November 2023, plus two forks from Gambero Rosso and recognition as an Emerging Restaurant among Italy’s top tables. He now leads the kitchen at Cellar to Table awarded by GreatList Guide in 2025.
