Rambu and Sage Gastro
Chef Jun Nishiyama began his career at Singapore’s Tippling Club (Asia’s 50 Best) at age 17, rising from intern to Sous Chef over seven years. He then staged at Geranium in Copenhagen (three Michelin stars, World’s 50 Best No. 1) before joining Ultraviolet in Shanghai (three Michelin stars) as Senior Sous Chef from 2017 to 2023.
He later opened Sage Gastro as Executive Chef and launched Rambu, a Southeast Asian restaurant, bringing together influences from Singapore, Copenhagen, and Shanghai.
