Stefano Bacchelli
Born in Tuscany, Chef Stefano Bacchelli views cooking as a continuous dialogue between flavors, techniques, and cultural influences. He refined his craft in Italy, France, and Switzerland, where he earned his first Michelin star.
In 2019, Bacchelli moved to Shanghai, fully immersing himself in Asian gastronomy. Within just 18 months, he achieved two Michelin stars and secured a place on Asia’s 50 Best Restaurants list. In 2023, he opened Scilla, his first Mediterranean concept, followed by Madre in 2024—China’s first «Bar italiano con forno.»
Bacchelli is celebrated across Asia for his ability to reinterpret Italian classics and French techniques through a cultural lens. His signature creations include reimagining braised tripe with fish maw and the Double Duck ’19—a tribute to Peking duck that elevates a Chinese culinary icon.
