Yunze (Zee) Zheng

Fabula and Alea

Chef Yunze Zheng trained at The Culinary Institute of America, earning a Bachelor’s in Culinary Science. During his studies, he worked at Michelin‑starred kitchens in New York: Le Bernardin (three stars) and Dovetail (one star).

After returning to Shanghai, he joined three‑Michelin‑starred Taian Table, rising to Sous Chef. In 2022, he co‑founded Fabula, a contemporary European fine‑dining restaurant, and Alea, a casual natural wine spot. That year, he was named among the Top 10 in China for the S. Pellegrino Young Chef competition.

In Shanghai, breakfast is usually street food with a cup of soy bean milk. Seventh Son’s crispy skin chicken is my all-time favorite
